From Barolo, in the Langhe hills, Canonica Giovanni oversees four DOCG denominations that tell the story of Piedmont's historic grape varieties through two main protagonists. Nebbiolo underpins the major red wines—Barolo and Barbaresco—structured wines that the production specifications mandate to thirty-eight and twenty-six months of aging respectively, long periods that define their architecture and longevity. On the other hand, Dolcetto finds its home in Dogliani and Dolcetto di Diano d'Alba, denominations that offer a more immediate and fruity interpretation of the same area. Four DOCG for two souls, then: the austerity of Nebbiolo and the drinkability of Dolcetto, both shaped by the calcareous soils and continental climate of the Cuneo hills. The company welcomes visitors year-round for tastings, with direct access to the wines: a stop allows one to measure, in a single taste, the distance between long-aging reds and those intended for everyday dining.
