Cantina Castello

Colli Bolognesi Pignoletto DOCG

Cantina Castello focuses on a single guaranteed denomination, Colli Bolognesi Pignoletto DOCG, within the eleven municipalities that define its perimeter in Emilia-Romagna. The reference grape variety is Grechetto gentile, the very identity of the indication, complemented by white grapes chosen for their suitability to this part of the Emilian territory. Thus, a varietal interpretation that rejects dispersion revolves around a single name. The assortment covers the entire spectrum of Pignoletto: the still white, the livelier frizzante, and the characterful spumante, each held to a minimum alcohol content of 11.5°. It is in the distinction between these three versions that the winery's skill is measured, capable of bringing out the mineral character that distinguishes the grape variety each time. Attention to purity and oenological precision becomes the recognizable hallmark of a producer who, while operating within a single DOCG, explores all its possible expressions.
