Cantina Chiara Ziliani produces Franciacorta from Provaglio d'Iseo, in the Brescia area known for protected traditional method sparkling wines. The company's sole denomination is built upon a precise range of grapes: Chardonnay, Pinot Nero, and Pinot Bianco, to which Erbamat is added, a rare variety that the region has rediscovered for its acidity. From these foundations, sparkling wines and rosés are born, aged in the bottle, reflecting the calcareous soils and the cool-continental climate of the protected area. The minimum maturation of eighteen months is not a mere calendar detail but the time during which the wine acquires the finesse and complexity that the denomination requires. Here, the work is measured by patience: the secondary fermentation in the bottle and the aging on lees define the texture of the perlage even before the grape variety. The result is a range consistent with the character of the area, where the freshness of the climate and the minerality of the soil remain legible in every version, from whites to rosés.
