In Bardolino, within the Veronese winemaking tradition, Cantina F.lli Zeni crafts two of Valpolicella's most iconic expressions: Amarone and Recioto, both DOCG. The grapes come from the 19 municipalities of the area and are based on the classic blend of Corvina Veronese, Rondinella, and complementary varieties, a common starting point from which the two wines take opposite paths thanks to the appassimento (drying) process. Amarone requires at least twenty-four months of aging to develop its character and exceed 14% alcohol, in a tension entirely focused on dry concentration. Recioto, in its passito and spumante versions, instead takes the sweet route, exploring what the dehydrated grapes can retain. Two wines, a single raw material, two destinies decided in the cellar. The winery welcomes visitors into its production cycle: a stop in Bardolino allows one to observe the appassimento process and taste, side by side, the two faces — dry and sweet — of Valpolicella's grapes.
