In Piglio, on the slopes of the Frosinate area, Cantina Martini focuses its work on a single register: that of Cesanese del Piglio DOCG. The two permitted grapes — Cesanese di Affile and Cesanese comune — translate into wine a territory of five municipalities, where volcanic soils and altitude impart a distinctive character to each vintage. There is no dispersion: everything converges towards the sole denomination that the winery is called to interpret. The disciplinary regulations dictate the conditions with a firm hand — at least 12% alcohol and no less than four months of aging before the bottle leaves the winery — and it is within these constraints that Martini measures the character of the grape variety.
