In Farra di Soligo, on the Treviso slopes where Conegliano Valdobbiadene Prosecco DOCG finds its definition, Cantina Progettidivini works with a singular focus and rare concentration. The territory offers five indigenous varieties—Glera, Verdiso, Bianchetta trevigiana, Perera, and Glera lunga—and from this palette, the winery crafts three distinct interpretations of the same landscape: a still white, a frizzante with measured effervescence, and a fully refermented spumante. Each version meets the minimum alcohol requirements set by the denomination, without seeking stylistic shortcuts. The choice to remain within a single name, varying it by degrees of pressure and fermentation, speaks to an understanding of the territory more as a grammar than a catalog. Here, the hill is not a backdrop but raw material, and the lesser-known grapes alongside Glera yield profiles that escape the more commercial image of Prosecco.
