Cantina Ripoli works with a single denomination, Chianti Classico DOCG, and does so starting from a calcareous terroir that imparts a recognizable mineral character to Sangiovese. The surface area is minimal—one and a half hectares in Radda—and this reduced scale is reflected in the method: hand harvesting, immediate destemming, fermentation in non-thermoregulated concrete tanks relying on spontaneous yeasts. It's an approach that foregoes corrective interventions and allows time to do its work. The 2016 and 2017 vintages rested for eighteen months in concrete before bottling, a long pause that serves to build structure without resorting to the shortcuts of new wood. The result aims to preserve the varietal expression of Sangiovese, within the boundaries of one of Tuscany's most renowned denominations. Ripoli thus presents itself as a small-scale operation with clear choices, where fidelity to a single wine becomes the way to engage with the demands of a long-codified territory.
