Cantina Romanese

From Levico Terme, Cantina Romanese navigates seven denominations that cover the entire Trentino wine spectrum, from the Rotaliana plain to alpine altitudes. Five are DOCs – Teroldego Rotaliano, Trentino, Trento, Valdadige, and Casteller – flanked by two broader IGTs, Vallagarina and Vigneti delle Dolomiti, which extend the reach to the Dolomites. The core remains Teroldego Rotaliano, the region's signature grape variety, which the regulations mandate to have a minimum of 11.5% alcohol. This diverse portfolio showcases a producer who plays with altimetry: from the Metodo Classico sparkling wines of Trento, aged for at least fifteen months on the lees, to the structured reds of Casteller, each denomination corresponds to a different altitude and soil. Moving between circumscribed DOCs and extended IGTs means interpreting Trentino as a vertical scale, where just a few kilometers of elevation change acidity, ripeness, and aromatic profile. The thread that holds such a broad range together is technical rigor: minimum alcohol levels respected, calibrated aging, and the choice to let the territory speak through grape varieties and altitudes rather than through the winery's style.
