Cantina Valpolicella Negrar Soc. Coop. Agr.

Active since 1933 in Negrar di Valpolicella, in the province of Verona, Cantina Valpolicella Negrar upholds a cooperative model that unites 240 grower members across 700 hectares of the Valpolicella Classica hills. This area is a benchmark for two red grape denominations: Amarone and Recioto della Valpolicella DOCG. Both originate from the same trio of grapes—Corvina Veronese, Corvinone, and Rondinella—and the practice of *appassimento*, which here both separates and unites the two wines. Amarone matures for at least twenty-four months and reaches 14% alcohol through a careful resting of the grapes; Recioto interprets the same terroir in a sweet key, in still or sparkling versions. The cooperative fosters a dialogue between knowledge passed down through generations and contemporary techniques, with a declared focus on quality and sustainability. The winery is open to the public: it's worth a stop to taste Amarone and Recioto side-by-side and grasp, in direct comparison, how a single *appassimento* practice generates two such different expressions from the same Veronese hillside.
