On the Salento plateau, where Negroamaro reigns supreme in the vineyards, Cantine Baldassarre works with a single denomination, Salice Salentino DOC. This grape variety yields wines of black fruit and a mineral texture, deeply rooted in sun-baked limestone and the area's maritime climate, characterized by moderate temperature swings and long seasons of light. Within the disciplinary regulations, the winery crafts reds and rosés that share the same varietal matrix and exceed 12% alcohol: a level that is not an enological manipulation but the natural outcome of optimal ripeness achieved in the vineyard. This choice to forgo a wider range of labels concentrates their efforts on a single origin and a grape variety that is the dominant voice of Salento.
