Cantine Ciervo focuses on a single denomination, Aglianico del Taburno DOCG, the red wine born from the volcanic soils of thirteen municipalities in the Benevento area. The star grape variety is Aglianico, complemented by other black grape varieties that contribute to the composition of reds and rosés. Each label ages for at least twenty-four months, a lengthy period that serves to tame the grape's austere tannins and build structure without sacrificing tension. It is a denomination of power, but here, that power is expertly managed. With a minimum alcohol content of twelve percent, the wines seek a balance between body and restraint, reflecting the character of the Campanian terroir rather than sheer volume. Mount Taburno imposes its geology—rocks and altitude—on the wine, and the winery accommodates this with patience, allowing time to transform youthful harshness into depth. The resulting portrait is that of a southern red that asserts its finesse, recognizable by the way it holds back its strength rather than flaunting it, vintage after vintage, within the same territorial framework.
