In Calosso, amidst the Asti hills, Cantine Daffara & Grasso works with three guaranteed denominations—Barbera d'Asti, Ruchè di Castagnole Monferrato, and Terre Alfieri—which together cover a mosaic of one hundred and eighty-three Piedmontese municipalities. The repertoire draws from the area's emblematic grape varieties: Barbera, the fragrant Ruchè, and Nebbiolo. It is precisely from Nebbiolo that the most intriguing part of the range is born: a spumante with a delicate pink hue, fine and persistent perlage, layered aromas of wild berries, and at least six months of aging on the lees. The thread that connects reds, whites, and sparkling wines is methodical: fermentations conducted with discipline and a careful interpretation of individual regional terroirs, where each denomination imposes its own grape varieties and rhythms. This is not a winery of a single register, but a workshop that alternates the structure of reds with the finesse of sparkling versions. The doors are open: a guided tour of the cellar allows visitors to closely follow this transition between varieties and styles, from still wines to those that play on the bubbles.
