Cantine di Verona is the cooperative group that brings together three long-standing wineries—Valpantena, Custoza, and Colli Morenici—distributed across the wine-growing areas of the province of Verona, from the Valpolicella hills to the moderating influence of Lake Garda. Five decades of cooperative life converge into a structure that speaks for many grape growers. The work centers around two denominations emblematic of the *appassimento* method: Amarone della Valpolicella and Recioto della Valpolicella, both DOCG, obtained from the Veronese trio of Corvina Veronese, Corvinone, and Rondinella—one dry and powerful, the other sweet, two outcomes from the same cluster left to rest. In 2024, the group obtained EQUALITAS certification for environmental, social, and economic sustainability. The winery is open for visits and tastings: an opportunity to understand, by tasting Amarone and Recioto side-by-side, how *appassimento* can lead the same grape variety towards power or sweetness, depending on where fermentation stops.
