Cantine Edomè

On the slopes of Etna, near Castiglione di Sicilia, Cantine Edomè cultivates a volcanic terroir that imparts austerity and distinct minerality to its wines. The choice is entirely within the indigenous heritage: Nerello Mascalese and Nerello Mantellato build the reds, while non-aromatic white grapes define the whites and reserve versions. It is a range that foregoes easy effects to accommodate what the mountain already suggests. A single denomination unites this work, Etna DOC, spread across twenty municipalities of the Catania plateau. Its standards—starting from a minimum alcohol content of 12.5%—are not a formal constraint but rather the imprint of a high-altitude microclimate, where thermal excursion and lava-origin soils slow down and refine maturation. The resulting wines speak more of altitude than of grape variety: taut, vertical, and not prone to softness. Edomè positions itself within this grammar of the volcano without forcing it, allowing altitude and stone to write the profile in the glass even before the winery.
