In Adelfia, in the hilly hinterland south of Bari, Cantine Imperatore operates within the boundaries of the Gioia del Colle DOC, the sole protected denomination governing its wines. This designation links grape variety, yield, and territory, finding its main voice here in Primitivo, flanked by Negroamaro and Montepulciano. The vines are distributed across five distinct crus, trained in alberello — the low, bushy form typical of Apulian viticulture — and are currently undergoing organic conversion. The absence of chemical intervention is the premise of a method that allows the vineyard to speak, and the result is evident from the first sip. Alongside traditionally produced reds, the winery ventures into less predictable research: orange wines obtained through the maceration of white grapes, and a spumante pas dosé, without added final sugars. It's a way to combine the viticultural memory of the territory with contemporary experimentation. The winery is open for visits: a tangible opportunity to explore the five crus and taste on-site, where the Apulian landscape transforms into a glass.
