Cantine Monfort was founded in 1945 in Lavis, when the Simoni family began wine production at the foot of the Trentino Alps. Today, in its fourth generation, the company works across seven protected denominations—five DOC and two IGT—ranging from Teroldego Rotaliano to Trento, extending to the broader indications of the Trentino and Dolomite territories, each an expression of the plateau's calcareous and clay soils. The sparkling wine project, launched in 1985, uses hillside Chardonnay and Pinot Nero grapes with the metodo classico, producing bubbles marked by salinity and mineral freshness. Around this core revolve the still wines, which interpret the region's reds and whites in an alpine key, from Casteller to Valdadige, reflecting the taut profile of high-altitude viticulture. The winery remains open for visits and tastings: it is a place where the continuity of four generations can be experienced firsthand, glass after glass, among the hillside vineyards that feed the metodo classico and the house's foundational denominations.
