In San Donaci, in the province of Brindisi, Cantine Paolo Leo operates within the DOC Salice Salentino, the house's sole denomination, where Negroamaro and other black grape varieties ripen on the calcareous soils of Salento. Founded in 1989, the winery focuses on the area's indigenous varieties—Negroamaro, Primitivo, Malvasia—cultivated in its own vineyards and a second winery in Monteparano. The production approach is accompanied by Equalitas certification, which brings environmental and ethical sustainability into the cycle of each vintage. From the same varietal base come reds, rosés, and whites, different interpretations of a Puglian terroir marked by limestone and the Salento climate. The denomination provides the framework, but it is the work with local grapes that defines the house style.
