CANTINE PIROVANO SRL

Although based in Calco, in the province of Lecco, Cantine Pirovano looks south, towards Oltrepò Pavese metodo classico and its 41 municipalities: Italy's northernmost sparkling wine area, dominated by Pinot nero. From this grape variety, along with Chardonnay and Pinot bianco, the company's sparkling wines are born. The method is metodo classico, with at least fifteen months of aging and a minimum alcohol content of 11.5%. This results in two registers: a dry, crisp, and vertical spumante, and a rosé version with more delicate contours, both conceived as a faithful interpretation of a territory that the general public still little associates with quality sparkling wines. Pirovano's work moves precisely on this ridge, claiming for Oltrepò a role that geography assigns it: that of a reservoir for Italian Pinot nero. Consistency rather than effect, therefore, in sparkling wines that aim to tell the story of the Pavese area's vocation without chasing trends.
