In Caiazzo, in the province of Caserta, Cantine Rao cultivates the volcanic soils of the Caserta area across five protected denominations. Three are DOCs—Falerno del Massico, aged for at least twelve months, Galluccio, and Aversa in its sparkling version—complemented by two IGTs, Terre del Volturno and Roccamonfina, which together encompass eighty-two municipalities. This range is built around typologies rather than individual labels, from structured reds to sparkling wines. The thread that binds this variety is the choice of native grape varieties: Aglianico forms the heart of the reds, while Asprinio and Coda di Volpe define the whites, in a work that champions the vocation of the Campania territory. The winery doesn't just produce: visits and tastings are open to the public. Those who come to Caiazzo can explore the entire range in a single tasting, from Falerno to the IGT expressions, and discern the common volcanic matrix in every glass.
