From Dogliani, a benchmark for Alba's viticulture, Cappa Tommaso manages four of Piedmont's most demanding denominations, all DOCG. The winery operates on two distinct varietal registers: Dolcetto, in its Dogliani and Diano d'Alba versions, focused on elegance and readiness; and Nebbiolo, which in Barbaresco and Barolo demands patience, with minimum aging periods of twenty-six and thirty-eight months respectively before release. It is a vertical range, traversing the most stringent classifications of the Langhe from top to bottom without shortcuts. The close comparison between the two symbolic grape varieties of the territory thus becomes an exercise in identity: on one side, the immediate fruit and drinkability of Dolcetto; on the other, the slowness and complexity of Nebbiolo in its two major expressions. Four certified origins, a single common thread—the pursuit of the character of each denomination and each grape. The winery is not open for visits.
