In Serralunga d'Alba, nestled in the hills of the Cuneo province, Cappellano crafts four Piedmontese denominations, all bearing the DOCG mark. The focus remains on Nebbiolo: the Barolo, aged for thirty-eight months—a period that allows the grape's tannic structure to dissolve into complexity—and Barbaresco, its more immediate yet no less rigorous counterpart. Arranged around this core are two expressions of Dolcetto—the dry-profiled Dogliani and the more concentrated Dolcetto di Diano d'Alba—showcasing the same grape from different soils. Each label adheres to its zone's production regulations, and the winery interprets these protocols as a discipline rather than an obligation. The distinction between a Nebbiolo for long aging and a Dolcetto for youthful drinking is not a hierarchy but a vocation: both demand precision, both reflect the geology of the Cuneo hills. The result is a compact catalog of powerful reds where the longevity of Barolo and the frankness of Dolcetto coexist without overlapping, each faithful to its own territory.
