CAPRA NIVES

Capra Nives operates in Diano Marina, on the western Ligurian coast, where the microclimate and soil nature shape Basilico Genovese DOP. Belonging to the species Ocimum basilicum L., this basil owes its distinct sweetness, devoid of the mentholated notes that elsewhere alter its profile, to the particular conditions of its south-facing, ventilated, and bright slopes. The company's fields are located just a few meters from the sea, in that narrow strip where the salty influence of the Tyrrhenian Sea meets the microclimates of the hills behind. It is the intersection of these two factors—sea breeze and hilly shelter—that builds the aromatic profile distinguishing this basil from any other grown away from the coast. Not just any herb, then, but the product of a restricted and recognizable geography, where each leaf bears the imprint of the place where it grew. Cultivation remains tied to a small parcel of land that the denomination precisely defends.
