Caputalbus is rooted in Ponte, one of the thirteen municipalities in the Benevento area that make up the Aglianico del Taburno DOCG. Here, the Aglianico grape, alongside other black grape varieties permitted by the product specification, meets the volcanic soils of the Sannio hinterland: a context that pushes the grape towards firm structures and long-lasting tannins. The production choice prioritizes time. Red and rosé wines start with a minimum alcohol content of 12% and undergo at least twenty-four months of maturation, a threshold that is not a formality but a condition for Aglianico del Taburno to soften its youthful vigor and reveal its depth. It's an approach that foregoes immediate gratification to accommodate the long timelines of the Taburno terroir, where altitude and the soil's mineral component leave a recognizable imprint. Caputalbus interprets the denomination as an exercise in patience: few gestures, much waiting, and wines that ask to be aged before they fully reveal themselves.
