In Melfi, at the foot of the Vulture volcanic complex, Carbone crafts a single great red wine: Aglianico del Vulture Superiore DOCG, expressed in the 400 Some and Stupor Mundi labels. The winery's hallmark is its underground barrel cellar, carved into the tuff beneath Toppo San Paolo, the system's first crater: here, the temperature remains constant and the humidity is the natural humidity of the rock, conditions that accompany the 36 months of aging required by the product specification. The stratifications of the walls function as a geological archive, revealing the very formation of the territory.
