Patata del Fucino IGP

Cardarelli Paride cultivates the soils of the ancient Fucino lakebed, now drained and transformed into one of Abruzzo's most unique agricultural plains, at the gates of Avezzano. Altitude and climate here create the conditions required by the Patata del Fucino IGP, in a valley floor enclosed by mountains where thermal excursion works in favor of the tuber. From this soil emerge potatoes with firm flesh and regular shape, characteristics that the regulations establish as the signature of this protected origin across the nine municipalities of the area. The thick, inseparable skin is more than an aesthetic detail: it ensures durability during storage and cooking, clearly distinguishing the product from common varieties. The connection to the terroir, therefore, is not through a scent or color, but through the very structure of the tuber, its resistance, and its behavior in the kitchen. A single IGP interpreted as an agronomic matter, where the character of the soil is measured in consistency rather than narrative, and quality is verified at the table.
