From Trescore Cremasco, in the province of Cremona, the Società Agricola Consortile Carioni oversees a portion of the Taleggio DOP area, a denomination that extends over approximately one thousand four hundred and eighty municipalities in northern Italy. Production follows the cheese's canonical profile: rectangular wheels weighing one and a half to two and a half kilograms, a raw and delicate paste, and a washed rind that accompanies maturation. Each wheel is placed on wooden boards and rests there for at least thirty-five days. It is during this resting period that Taleggio develops its creaminess and distinguishing aromas, ranging from lactic notes to the more decisive ones of the rind. Carioni's consortium structure gathers the work of multiple suppliers under a single standard, with the aim of maintaining consistent quality without deviating from the denomination's artisanal methods. The result is a Lombard cheese that declares its belonging already in its shape and controlled maturation.
