Sante Carletti navigates among the most prestigious top-tier denominations of Marche, from Recanati to the calcareous hills of Matelica and Jesi, up to Serrapetrona. His portfolio covers four DOCG wines and features the region's emblematic grape varieties: Montepulciano, which structures the red of Cònero; Verdicchio, offered in two riserve—that of Matelica and that of Castelli di Jesi—and Vernaccia nera di Serrapetrona, a rare grape that here expresses itself in both spumante and still versions. Each denomination imposes its own timing and grammar. Cònero requires at least twenty-four months of aging to build complexity; the white riserve reach full maturity around eighteen months. This is not a random list but a portrait of territorial knowledge that expands from eight to nineteen municipalities depending on the area, a concrete measure of how much each set of regulations impacts the finished wine.
