From its base in San Damiano d'Asti, Carlin de Paolo oversees four Piedmontese DOCG wines, clearly divided into two families. On one side, Nebbiolo, in its two most rigorous interpretations: Barbaresco, with at least twenty-six months of aging, and Barolo, which requires thirty-eight. On the other, Dolcetto, a more immediate grape variety, in the Diano d'Alba and Dogliani versions, where structure and fruit find a different balance. Run by the family from generation to generation, the winery works distinct terroirs between Langhe and Monferrato, producing red wines with moderate alcohol content, between 12.0 and 13.0%. It's a choice of balance rather than power, which allows the differences between the two key grape varieties of the area to be appreciated.
