In Torrecuso, on the Taburno hills of Benevento, Carmar focuses its work on a single denomination, Aglianico del Taburno DOCG, the grape variety that finds one of its most austere expressions here. The winery produces both structured reds and more delicate rosés, two interpretations of the same grape that convey the mineral harshness of the soil in this part of inland Campania. The distinguishing feature is patience: each wine rests for at least twenty-four months before release. This time allows Aglianico, a naturally tannic and taut grape, to soften its edges without losing its characteristic tension, arriving in the glass with a complexity that matures slowly.
