In Valsassina, in Pasturo, in the province of Lecco, Carozzi Formaggi produces three protected designation cheeses, all DOP, in a production area that extends over a vast Lombard region. Half a century of cheesemaking craft coexists here with contemporary technique, blending ancient methods preserved with flavors calibrated for today's palate. The three denominations outline a small scale of aging and character: the Salva Cremasco, a washed-rind parallelepiped aged for at least 75 days; the Taleggio, in rectangular 2.5-kilo blocks matured on wooden boards; and the Quartirolo Lombardo, the freshest, with a slightly acidic profile. The dairy opens its doors to visitors: a stop in Valsassina allows one to follow the three cheeses from shape to rind and to taste them in the order that tells their evolution, from the youngest bite to the most mature, grasping firsthand the link between the valley and what is derived from it.
