Straddling San Casciano and Mercatale in Val di Pesa, Carus extends over twenty-six hectares within the sole denomination that guides its work, Chianti Classico DOCG. Of this area, thirteen and a half hectares are dedicated to Sangiovese and other Tuscan red grapes, the heart of a production that seeks its measure in the terroir. The choice to concentrate on a single set of regulations allows for a clear understanding of how soil and exposure shape each expression. However, the vineyard is not the whole story: four and a half hectares of olive groves complete the farm's picture, a sign of organic and eco-sustainable management extended to the entire estate.
