In Mezzano, where the Primiero valleys ascend towards the Paneveggio–Pale di San Martino Natural Park, a dairy cooperative collects milk from around sixty-five members. Twenty of them bring summer milk from high-altitude mountain pastures (malghe), while the rest comes from valley-floor farms. This fresh milk, collected daily, fuels a single production: Grana Padano DOP. It's a cooked-curd cheese that matures slowly in wheels weighing 24 to 40 kilograms, a measure of time more than weight. A small system revolves around the dairy, bringing together work and territory: twenty-six people, including permanent and seasonal staff, and two directly managed malghe where catering connects producers with consumers. Here, the bond with the mountains isn't theoretical; it moves from pasture to plate. Those who visit in summer can stop at one of the two malghe, order local dishes, and taste the house cheeses right where the milk originates.
