Casa Michelica

Casa Michelica was founded in December 1987, when Carlo Adamo planted over two hundred olive trees on his Modica land, choosing the native varieties Verdese, Biancolilla, and Tonda Iblea. A centuries-old olive tree, still alive on the estate, has become the company's logo: its gnarled trunk holds together the memory and present of the farm. We are on the Modica plateau, about twenty kilometers from the sea, where light and ventilation shape the oil's aroma. The sole denomination, Monti Iblei DOP, is interpreted here through a deliberately traditional management: natural organic fertilizer, triennial pruning, controlled irrigation. From this set of slow choices comes an extra virgin olive oil with aromas of green tomato and a medium-intense fruitiness, recognizable as the signature of the Iblean territory. Not an oil for effect, but an oil of place, bringing the plateau, its varieties, and the gesture of those who chose to plant almost forty years ago, into the glass.
