Casa Zarpellon

In Romano d'Ezzelino, within the eleven municipalities that define Asparago Bianco di Bassano DOP, Casa Zarpellon cultivates a vegetable that owes almost everything to the soil. The ecotypes are local — the 'Comune' and 'Chiaro' of Bassano — planted in the alluvial soils of the Venetian plain, where soil composition and water management determine the success of the harvest. The result is a pale and delicate spear, whose aromatic quality and texture are not an accessory but a direct consequence of the local geology. The asparagus grows protected from light, which removes chlorophyll and leaves it with that whiteness that is its signature. Here, the denomination does not protect just any method, but a precise encounter between established varieties and a particular plain soil, difficult to replicate elsewhere: it is in this bond between plant and land that Asparago Bianco di Bassano finds its identity.
