Casale San Paolo operates within the boundaries of Roma DOC, a broad denomination extending across sixty-four municipalities in Lazio. Here, volcanic soils and a Mediterranean climate lend structure to a range of grape varieties—Montepulciano, Cesanese, Sangiovese—which contribute a natural depth to the red wines. The producer works within a single set of regulations, that of Roma DOC, but explores its various expressions: red blends crafted from local grapes and whites ranging from crisp and dry versions to more amiable, fuller, and structured ones. The minimum alcohol content of 12.5°, a threshold that guides grape ripening and the final character of the wines, also contributes to defining the contemporary identity of the area.
