Casali Viticultori operates across a chessboard of seven DOC denominations distributed along Emilia-Romagna's wine belt, where each title corresponds to a different fragment of territory. The focal point is Lambrusco, presented in its three varietal versions—Sorbara, Salamino di Santa Croce, and Grasparossa di Castelvetro—with indigenous grape varieties giving rise to spumante, frizzante, and red types around 10.5–11% alcohol, each with its own texture and degree of structure. Alongside the reds, the winery explores the whites from the Colli di Scandiano e di Canossa and the broader Reno areas, bringing back historical varieties like Spergola and Malvasia di Candia to the vineyard. The Reggiano and Modena denominations complete the picture, further expanding the regional scope. This multi-denomination breadth is not a collection of labels but a method of interpretation: traversing seven DOCs means mapping the diversity of Emilian terroirs, from the Lambrusco soils to the white wine hills, and reflecting these differences in the bottle rather than flattening them into a single style.
