Rooted in Borgoratto Mormorolo, in the high hills of Oltrepò Pavese, the Valentino and Rosanna Casarini estate has dedicated over forty years of work to a single craft: the metodo classico. The base wines are crafted from Pinot Nero, Chardonnay, and Pinot in its white versions, blended into bottles designed to last over time rather than be consumed quickly. Each vintage rests for at least fifteen months on the lees, developing the finesse of the perlage and the depth that only aging can add. This approach interprets the demanding standards of the local DOCG with careful consideration, where patience weighs as much as the vineyard itself. The experience accumulated over four decades is evident in the consistency of the results, vintage after vintage. The cellar is not open to the public, but the declared longevity of its sparkling wines speaks to a precise choice: prioritizing endurance over time, consistent with a territory that has made bottle re-fermentation its distinctive hallmark.
