From Barolo, in the province of Cuneo, Cascina Adelaide oversees four Piedmontese denominations across some of Italy's most regulated terrain, where Nebbiolo is distributed across eleven municipalities according to strict protocols. The range is organized by grape variety families: on one side, the great red wines of Nebbiolo; on the other, the Dolcetto. Barolo requires at least 38 months before release and bears its austerity; Barbaresco, with a minimum of 26 months, offers a silkier version. Alongside them are the Dolcetto—the Dolcetto di Diano d'Alba and the Dogliani—reds of early charm, ready sooner and more direct, balancing the wait demanded by the Nebbiolo. Each bottle reflects the terroir of the Langhe through a different idea of time. In the cellar, guests can taste directly from the producers: a visit to Barolo allows one to follow, glass after glass, the discipline required to transform tannic grapes into expansive complexity.
