In Coazzolo, in the Asti area bordering the Langhe, Cascina Carlot di Claudio Mo cultivates four DOCG wines that are distinctly divided by grape variety. On one side, Dolcetto, in its Dogliani and Dolcetto di Diano d'Alba versions, a grape of immediate charm and dark fruit; on the other, Nebbiolo for the two great reds destined for aging. Barolo and Barbaresco complete the quartet on the noble side: power, tannin, time. The winery's Barolo undergoes thirty-eight months of aging before being released, the necessary period for Nebbiolo to transition from hardness to depth. This range creates a dialogue between two opposing approaches to drinking Piedmontese wine—the immediacy of Dolcetto and the patience of Nebbiolo—without choosing between them. Each label pursues varietal character and regional nuance, in an area where a few kilometers can change the aroma in the glass.
