Cascina Fonda has cultivated Alta Langa since 1963, working with Pinot Nero and Chardonnay across the 148 municipalities that comprise this Piedmontese sparkling wine denomination. The winery produces both the sparkling version and the rosé, aging each for at least thirty months on the lees: a long period, well beyond the minimums for many sparkling wines, which serves to build complexity and finesse of the perlage. Rooted among the Langhe hills, the winery interprets a high-altitude classic method, where temperature variations and exposure impart tension and freshness to the sparkling wines, within the minimum 11.5% alcohol profile set by the production specifications. Rather than immediacy, the work focuses on the wine's ability to withstand long aging on the lees without losing momentum. Cascina Fonda opens its doors for tastings: a visit allows one to closely follow the journey from grape to bubble and to compare the sparkling wine and rosé right where they are born, among the rows, appreciating the difference that long aging imparts to two expressions of the same denomination.
