In Novello, the Cogno family cultivates vineyards using the methods of their predecessors: a daily, patient effort that allows the territory to speak before the label. Cascina Gavetta remains an agricultural estate rather than a commercial one, where quality stems from meticulous viticulture, observing each plant row by row, much like a shepherd recognizes their flock. From this work emerge four DOCG denominations that cover the entire spectrum of Langhe expectations. Dolcetto di Diano d'Alba and Dogliani offer the readily enjoyable fruit from more accessible plots; Barolo, with its thirty-eight months of aging, and Barbaresco, on the other hand, demand the slow pace of Nebbiolo. Between these extremes lies a knowledge built day by day, unspoken but etched into every gesture. UNESCO's recognition of the Langhe externally confirms what was already evident here. The winery is not open for visits, but the four labels are enough to show how a single hand can interpret different timings and grape varieties without ever forcing their character.
