On the morainic hills around Sommacampagna, where glacial deposits have left a mineral and well-drained soil, Cascina Mondator cultivates its sole denomination, Custoza DOC, according to methods handed down for four generations. Harvesting and pruning remain manual, a choice that preserves the integrity of the characteristic grape varieties — Garganega, Cortese, and Trebbiano Toscano — and allows each vintage to tell the story of the Veronese landscape from which it originates. From this base, the winery produces three interpretations of the same white: the base version, the superiore, and the riserva, each with at least eleven degrees of alcohol and a progression of structure and aging. It's a contained but coherent range, showing how a single denomination can articulate itself in different registers without betraying its terroir. The atlas captures here the encounter between a traditional agricultural practice and precise enology. Visitors to the cellar can follow this scale from the most immediate glass to the riserva, and directly measure how much the morainic hills influence the wine's character.
