In Barbaresco, under the guidance of Roberto Bianco, Cascina Morassino brings together four denominations, guaranteeing the Cuneo Langhe, by working on two opposing registers of time. On the long-term side are the two great Nebbiolo wines: Barbaresco, which rests for twenty-six months, and Barolo, which respects thirty-eight months before being sold — waiting periods that are not a whim but a condition for the grape variety to release its tannins and complexity. On the short-term side, however, are the two Dolcetto wines, Dolcetto di Diano d'Alba and Dogliani, which offer immediate satisfaction without compromising on definition: wines of fruit and backbone, designed for the everyday table rather than the cellar. It's a deliberate balance between patience and readiness, between reds for meditation and reds for drinking young, which summarizes Piedmontese rigor without stiffening it. The winery welcomes visits and tastings: it's worth stopping to taste the two expressions of Nebbiolo in sequence and understand, glass after glass, how much waiting truly matters.
