Cascina Pastori S.S.

Bubbio · Province of Asti · Piemonte

Asti DOCG

In Bubbio, within the Asti DOCG zone that unites fifty-one Piedmontese municipalities, Cascina Pastori S.S. cultivates Moscato bianco and other suitable aromatic white grape varieties from the region. The denomination, unique to the winery, is expressed in multiple directions: sparkling wine, Metodo Classico aging, and still whites, all adhering to the minimum alcohol content of 11.5% stipulated by the regulations. This is a broad interpretation of the same grape variety, ranging from fragrant bubbles to the still version without sacrificing the aromatic intensity that is Moscato's signature. Each bottle rests for at least one month, a brief but sufficient pause for the olfactory profile — flowers, white-fleshed fruit, citrus notes — to acquire finesse and definition rather than dissipating. The winery is not open for visits, but the consistency of the range speaks of a commitment to varying the form without betraying the identity of the raw material: the aromaticity of Moscato remains the thread that binds sparkling, Metodo Classico, and still wines into a single productive vision.
