The winery works with Chardonnay, Pinot nero, and Pinot bianco alongside Erbamat, an indigenous variety that has proven useful in maintaining freshness and acidity in warmer vintages. The wines rest for a minimum of eighteen months, a period that allows the expected complexity of a traditional method sparkling wine to develop. With an alcohol content of 11.5% or higher, these bottles balance two requirements: the imprint of a morainic terroir rich in glacial deposits and the cellar discipline that governs secondary fermentation and aging on lees.
