In Grosio, in the province of Sondrio, Cascina Toni roots its work in the Valtellina cheesemaking tradition and thrives on two DOP denominations that tell the story of the Lombard mountains. Valtellina Casera, a semi-hard cheese made from partially skimmed milk, spreads its dairy culture across seventy-seven municipalities; Bitto, raw and cylindrical, is produced only from June to September within eighty-seven certified zones, tying its production to the rhythm of the alpine pastures. These two cheeses, therefore, mark different seasons: one can be made year-round, the other is confined to the brief high-altitude summer.
