Cascina Valon operates in Neviglie, in the province of Cuneo, where the Piedmontese hills offer soils suitable for Moscato bianco and other aromatic white grape varieties permitted by Asti DOCG. From a single denomination, Bruno Bongioanni derives three distinct interpretations: the sparkling wine, the classic method version, and a still white wine, each adhering to precise regulations, from a minimum alcohol content of 11.5% to at least one month of aging. The choice to interpret the same varietal base in distinct styles speaks volumes about the cascina's method, where winemaking is conceived as a tool to bring out the aromatic character of the grape without flattening it into a single formula.
