Cascone Salvatore operates in Ragusa, within the Ragusano DOP area that extends across fifteen Sicilian municipalities. The dairy transforms raw milk into a pasta filata cheese, shaping each twelve to sixteen-kilogram form into the parallelepiped that is the unmistakable signature of the denomination. The straw-colored rind and that squared geometry are not merely aesthetic: they speak of a processing technique rooted in the landscape of the Val di Noto. A single denomination, maintained strictly according to its production specifications. Pasta filata requires expert hands and precise timing, and the large size of Ragusano distinguishes it from more manageable cheeses, linking it to a dairy culture of the Hyblaean plateaus. Here, local milk becomes a material that is preserved and aged, carrying within it the mark of the pastures where it originates. Cascone remains faithful to the ancient form—the large squared block—without yielding to formats more convenient for the market. It is in that choice of measure, even more than in its flavor, that Ragusano declares its belonging to the southeast of the island.
