In Matelica, amidst the hills of Marche, Case Rosse carries on the pastoral tradition of central Italy. The company dedicates itself to a single protected production, Agnello del Centro Italia IGP, raising animals that transition from mother's milk to high-altitude grazing, in a cycle dictated by the Apennine seasons. It is a work that follows the rhythm of the land rather than that of the market. The lambs are classified according to carcass weight and development stage—light, heavy, or castrated—in compliance with the standards of the Protected Geographical Indication, which regulates production across one thousand four hundred and three municipalities in central Italy. Behind these parameters lies a concrete link to the territory: the pasture, the water, the grass of the hills become part of the meat. Case Rosse thus represents a piece of that pastoralism that keeps the inner slopes of the Apennines alive, where farming is not a relic of the past but still a productive practice. The result is a product that bears, in its very classification, the geography from which it originates.
