In Torrita Tiberina, on the outskirts of Rome, CASEAREA AGRI IN produces Pecorino Romano DOP, the cooked sheep's milk cheese that has given its name to an entire category. The protected area is vast and surprising: 783 municipalities distributed between Lazio and Sardinia, testifying to how much this cheese has migrated and taken root far from its Lazian origin. The production specifications impose a strict seasonal rhythm, with processing allowed only from October to July, in harmony with the sheep's milk cycles. Each wheel ages for at least five months, extending to eight for the more mature versions, those destined for grating and sought after by chefs and enthusiasts. It is in that extended aging that its character is defined: the paste becomes dense and crystalline, the savoriness reaches the intensity that makes Pecorino Romano unmistakable in the kitchen. More than an ingredient, here the cheese is the product of long periods and a protected geography that unites two distant regions.
